Most experts believe, however, that the modern English term "soupe" derives from the French word "soupe," which means soup or broth.

Tom Yum is one of the best known Thai dishes, a spicy, sour, and aromatic soup that is traditionally served with rice.


Shallots, lemongrass, fish sauce, minced fresh ginger or galangal, lobster, mushrooms, kaffir lime leaves, lime juice, and minced Thai chili peppers are among the ingredients.


Tom yum is traditionally garnished with coriander leaves and eaten as an appetizer. Thanks to its success, numerous variants of the soup have appeared over time, including tom yum gai (chicken) and tom yum talay (mixed seafood).

Traditionally, this deep, smooth and rich puréed soup contains ingredients such as milk, fish, cognac or wine and a mixture of spices.


The meaning of its name is still under question – others say that the term refers to a soup that is cooked twice (bis cuits), as the conventional method of making soup involves first roasting the shellfish and then simmering it again in the delicious broth.


Another theory suggests that this is due to the Bay of Biscay, the cuisine of which traditionally uses spicy ingredients similar to those found in bisque.


Bisque was first recorded as a shellfish soup in the 17th century, causing food historians to believe that it was initially a fisherman's dish that was made to make the most of the ingredients available.

Miso soup is a popular Japanese soup prepared from a stock named dashi, miso paste and a number of other ingredients such as seaweed or tofu. It is estimated that more than 70% of Japanese people eat soup for breakfast, although it is widely available at any time of the day.


The soup is believed to have healing qualities because it alkalizes the blood and revives the nervous system. The main ingredient is called miso - a mixture of rice, salt, water and fermented soybeans, shaped into a paste that is close to the texture of peanut butter.

The most common is pho nam, which originates in Southern Vietnam, and pho bac, which is from Northern Vietnam and considered to be the original pho.
